AHH! Sorry I have been MIA for the last 10 days. I’ve returned to Australia and came down with a terrible flu. Not to mention..I was in the process of packing to move to Europe! I’m now all better, en route to the States and can get back into blogging :D

I am SO excited to share this vegan cheesecake recipe with you all. A friend printed it for me almost 6 months ago and I just found it again. I haven’t had a chance to make it but it has been a HUGE HIT with her boyfriend and family.

Trim Treat Thursday: Mango, Avocado and Macadamia Salad

OH MY….

This looks and sounds heavenly!! I am definitely without-a-doubt making this when I get home from Thailand in two days.

Mango Avocado and Macadamia salad

  • 1 ripe mango
  • 1 ripe avocado
  • Juice of 1 lime
  • 2 tbsp of olive oil
  • 1 garlic clove, crushed
  • 1 tsp wholegrain mustard
  • 1 long red chilli, deseeded and sliced
  • 100g rocket leaves
  • 1 cup macadamia nuts, crushed

Smoothie Sunday: Three Berry Tofu Smoothie

Tofu in a smoothie! I never would have thought of that! This smoothie sounds pretty weird but the potential to be amazing. Please someone test it out and let me know if it’s good :D I will be forever in your debt!

  • 2 Cups 
  • Fat Free
  •  Milk
  • 1/2 Cup Orange Juice
  • 3 oz Silken Tofu
  • 2 Cups Rader Farms 3 Berry Mix (frozen), OR
  • 2 Cups of any frozen fruit you like.

I am incredibly excited as ‘I Quit Sugar‘ Author Sarah Wilson has just released a sugar-free chocolate cook book. I was a bit behind the times with the I Quit Sugar craze but have finally made a purchase and the cook book is amazing. If you have been following my blog for a while you might have noticed that I mainly post dessert recipes. I don’t know why but I’m not huge on main meal recipes. I’m a salad/healthy snacks/dessert girl.

Smoothie Sunday: Skinny Choc Superfoods (Vegan!)

I like to pack my smoothies full of nutritious, healthy ingredients that wouldn’t taste good by themselves. A chocolate smoothie is the best way to hide vegetables and green powder (spirulina, wheatgrass etc) in your diet!

Superfood Cacao Coconut Macaroons

For my first Trim Treat Thursday blog post, I’ve decided to find a superfood dessert recipe that doesn’t sound too difficult to make!
Unfortunately I couldn’t test this out as I don’t have a kitchen in my current place. As part of trim treat tuesday, I will ALWAYS cook the recipe myself when I can – that way I can eliminate any recipes that are total flops or sound better than they taste. This one is a bit more complicated as you will need a dehydrator (you can pick these up from most department stores). Dehydrators are great because you can make your own dried fruit snacks!

2 Ingredient Chia Seed Treats!

This idea was stolen from my sister’s room mate. So good!

All you need is some berry juice and chia seeds :) I used BOOST ‘Skinny’ berry juice.

Add 2 tablespoons of chia seeds to a small glass of juice, refrigerate for 1-3 hours and voila! A chia seed treat.
Make sure you mix them in really well as they can all stick together if you don’t.
