Decadent Raw Vegan Chocolate Mousse

This mousse sounds kind of weird because the main ingredient is avocado. It really doesn’t taste like avocado though!
It’s a healthy version of chocolate mousse that you can eat without feeling guilty :) I keep my serving sizes quite small.

As you can see below, I’ve added raspberries on the top. YUM!

Raw Vegan Chocolate Mousse

 

2 large ripe avocados

1/2 cup organic unsweetened cocoa powder

1/2 cup agave nectar, plus more to taste

1 1/2 tsp pure vanilla extract

1 1/2 tsp almond extract

1/2 pint fresh raspberries, or whatever berry you have on hand

Method

1. Cut a ripe avocado in half. Use a big knife to grab the pit and turn to remove. Spoon out the meat of the avocado and then blend to break it down a bit.

2. Add in cocoa powder, agave nectar, vanilla extract, and almond extract and blend for 1 to 2 minutes, making sure every part is included.

3. Refrigerate overnight and serve in martini glasses with garnish.

5 Ways To Easily Eat More Fruit and Vegetables!

1. Eat it

I don’t know about you…but I love fresh, tasty salad! Grab some spinach leaves, capsicum, red onion, tomato, cucumber and whatever else you like and make a big batch of salad to keep in the fridge. Mix some lemon juice and olive oil together for a beautiful dressing. So good!

Soup..who doesn’t enjoy soup! Roast some vegetables with garlic, onion and your favourite herbs and toss it into a blender :)

2. Drink It 

Add into a shake
Ok this one SOUNDS like it would be bad but there are some green vegetables that you really can’t taste if you blend them with fruit and lemon (lemon masks the bitter taste that kale sometimes has).

3. Hide it

In your dessert!
You can hide ingredients like spinach in lots of things :) check out this brownie recipe that has carrots AND spinach hidden!

You wouldn’t know that this delicious brownie has spinach and carrot in it!

4: Add it

Make an effort to include a piece of fruit with your breakfast every morning. Add a side of vegetables next time you go to a restaurant. Just ask yourself next time you’re about to eat ‘what fruit or vegetables can I add to this right now?’

5: Roast it

Toss some chopped pumpkin, sweet potato, asparagus, leeks or whatever you prefer in some coconut oil (don’t use too much) and bake for 30 minutes. Healthy & yummy!

Roasted Asparagus and Leek Soup

Tonight I invented my own soup recipe and it actually turned out! YAY! The recipe is below and makes enough for one really hungry person or two moderately hungry people.

Vegan, plant-based roasted asparagus and leek soup!

Ingredients:
4 leeks
11 asparagus stalks (ends trimmed)
3 garlic cloves
1/3 cup cashews
Handful of chives
Coconut Oil
1 cup reverse osmosis filtered water (normal water is fine if you don’t have filtered)
Pinch of sea salt
Pepper to taste

Drizzle some organic coconut oil over the leeks, garlic and asparagus. Roast in the oven at 180 degrees celsius until slightly brown. Approx 25-30 mins

Vegetables ready for the oven!

Combine roasted ingredients with chives, cashews, water and salt in a blender or food processor.

Cashews and chives

Blend until creamy!

Raw, Vegan Chocolate Truffles – SO EASY!

I have made this recipe before in brownie form but thought I’d share the truffle version with you!

Ingredients:
2 cups of pitted dates
Juice of 1 lime
2 level tablespoons of cacao powder
Handful of almonds

Blend all of the ingredients in a food processor or blender and roll in coconut. So simple!

Strawberry & Banana Ice Cream with Coconut Sprinkles

This is so easy to make!! Unfortunately you do need to have a high powered blender like a Vitamix or Blendtech. I think there are some other brands out there a little bit cheaper. I use a Vitamix!

Ingredients:
2 frozen bananas
10 frozen Strawberries (I leave the green part on for extra vitamins)
Handful of desiccated coconut

Method:

Blend banana and strawberries by pushing them into the blender blades on high speed (use the tamper)
After about 45 seconds it should be nice and creamy :)
Sprinkle some coconut on top and ENJOY!

Melissa’s 10 Day Fruit & Vegetable Detox Diary

After eating more than my fair share of calorie-laden goods this year, I have decided to go on a 10 Day Fruit and Vegetable detox. The goal is to eliminate all the toxins and waste build up in my body and give my immune system a boost! Here is a little bit of information about detoxing and what to expect:

What is a detox?

Detox, short for detoxification, is the body’s natural, ongoing process of neutralizing or eliminating toxins from the body. Toxins are anything that can potentially harm body tissue, including waste products that result from normal cell activity, such as ammonia, lactic acid and homocysteine, and human-made toxins that we are exposed to in our environment, food, and water. The liver, intestines, kidneys, lungs, skin, blood and lymphatic systems work together to ensure that toxins are transformed chemically to less harmful compounds and excreted from the body.

Why do People go on a Detox Diet?

A growing body of research suggests that many of the chemicals we ingest daily through food, water, and air can become deposited in fat cells in our bodies. Toxins include pesticides, antibiotics and hormones in food, chemicals from food packaging, household cleaners, detergents, food additives, heavy metals, pollution, drugs, and cigarette smoke. A diet that lacks certain nutrients may also impair our natural ability to detoxify chemicals, which further leads to their build-up in the body. The cumulative load, called the “body burden”, is thought to lead to illness and has been linked to hormonal imbalance, impaired immune function, nutritional deficiency, and an inefficient metabolism. Signs are thought to include indigestion, poor concentration and sluggishness, headaches, bad breath, fatigue, poor skin, and muscle pain.

People often report improved energy, clearer skin, regular bowel movements, improved digestion, and increased concentration and clarity after a detox diet.

Who Shouldn’t Try a Detox Diet?

Anyone considering a detox diet should consult a qualified health professional and/or their medical doctor first. Pregnant or nursing women or children shouldn’t go on a detox diet. People with anemia, eating disorder, diabetes, kidney disease, autoimmune disease, cancer, terminal illness, certain genetic diseases, and other chronic conditions shouldn’t try this diet or should do so only under the supervision of their primary care provider. It is not intended for alcohol or drug detoxification.

Side Effects

One of the most common side effects is headache within the first few days of starting the detox diet, often due to caffeine withdrawal. For this reason, practitioners often suggest gradually decreasing the amount of caffeine prior to starting a detox diet. In addition, some people opt to take time off work to begin a detox diet or start the diet on the weekend.  Other side effects include excessive diarrhea, which can lead to dehydration and electrolyte loss. Constipation may occur if people consume excess fiber without also increasing their fluid intake. Other side effects can include tiredness, irritability, acne, weight loss, and hunger. Any worsening of symptoms or new symptoms that occur during a detox diet should prompt a visit to a qualified health professional. If a detox diet is continued for a longer time, it may result in nutrient deficiencies, particularly protein (some detox diets omit animal products) and calcium. Source

 

Melissa’s Detox Plan 

My plan is to mainly consume green juice made from fruit and vegetables. I am not going to be eating any grains or nuts during the ten days.

What I will be eating:

Fruit – pineapple, apples, kiwi fruit, banana, strawberry, lemons, oranges, berries, avocado

Vegetables – spinach leaves, silverbeet, cucumber, kale, capsicum, lettuce, onion, carrot, pumpkin, tomato, beetroot, sweet potato

Herbs – fresh & dried Sea salt

What I will be avoiding:

Coffee
Dairy – eggs, milk, cheese
Bread
Chocolate, lollies etc
Tofu

My Goals: The main goal is to detox my system and boost my immune system! I am not doing this as a weight loss diet. Obviously, I will lose weight while on the detox and that will just be an added bonus. I honestly don’t think I would be able to stick to the plan if it was only for weight loss!

Exercise:  Normally I lift weights at the gym and don’t do a lot of cardio. I plan to do light cardio sessions while on the detox and stretching exercises such as yoga or pilates!

DAY ONE

I started off the morning with a Zaraffas coffee and sour straps. Wait..that isn’t detox food? WOOPS! So not off to a good start, I made my official starting time at 12 midday!

Meal One: Green juice made from spinach, kale, two small pieces of pineapple, 1/2 green apple & 1 kiwi fruit & small piece of melon

Meal 2: Green juice made from spinach, strawberry, melon and mint

Meal 3: Carrot sticks and cauliflower dip [RECIPE]

Meal 4:Banana, strawberry and coconut icecream [RECIPE]

Raw vegan cauliflower, chive and avocado dip!

Healthy Lunchbox Snacks For Work or School!

I am fortunate enough to work for myself from home so I don’t really have to worry about taking packed food to work. I do however have a little ‘snack’ box in my cupboard that I keep healthy things in when I am feeling like I could lose control of my eating!

A few staple ‘snacks’ that I keep in the house are:

Air popped popcorn packets
Peanut butter & honey rice crispy treats (Recipe here)
Stevia sweetened chocolate – Sweet williams, Well Naturally
5 grain muesli bars or Carmens muesli bars
Special K Lemon Meringue Bars
Fruit
All of the above would make great additions to your lunchbox!

Pumpkin, Fetta & Pinenut/Walnut Salad 

Make a big batch at the start of the week and take a medium sized container to work with a fork! Easy :)
Ingredients: spinach leaves, fat free sundried tomatoes, red onion, roasted pumpkin pieces, danish or low fat fetta, walnuts
Dressing: the oil from the sundried tomatoes is usually enough of a dressing. Otherwise use a little bit of balsamic vinegar!


Homemade Instant Vegetable Soup
I haven’t tried this one yet but definitely will grab the ingredients next time I go to the supermarket!
You cook a batch of soup concentrate and freeze small portions in single servings. By the time you get to work it has defrosted and all you need to do is add some boiling water! Way less salt & preservatives this way

Also consider taking a slice of Stevia Sweetened Banana bread, a raw vegan brownie or a peanut butter cookie!

As I am a vegetarian I have only suggested meat-free options.
