Normally I go to the farmers market on Sunday but this week I stayed in Brisbane (an hour away from where I live) on Saturday night and didn’t get time to go.
I plan on making the following things…
- Veggie Mince with garlic, onion & Bolognese sauce (high protein, low carb meal for night time)
- Mini wholemeal pizzas (I already had broccoli, red onion, goats cheese & fetta cheese at home)
- Poached pears – Using Bosc pears left from last weeks shopping
- Breakfast – 40g Oats + 50g Blueberries
- Snack – Blueberries & Greek Yogurt
- Pumpkin & Sweet Potato Soup – (sweet potato left from last week)
- Healthy Omelette – Spinach, fetta cheese, tomato, onion & tomato sauce inside
- Berry Smoothies -Organic rice milk, blueberries, strawberries, low fat greek yogurt
I try to always have some healthy snacks in the house for those days that I feel like eating anything/everything.
The popcorn comes in handy towards the end of the week when cheat day seems like a million miles away!
I love Carmens muesli bars, they’re not extremely addictive like other brands (special k chocolate caramel bars..dangerous!). They’re good to eat when you’re on the run!













Great post! How many calories are in the WW Mousse??? I currently have a low fat hot chocolate but as the weather is getting warmer I need to start looking for something else.

your meals sound so yummy. I haven’t tried that quorn mince but I have tried the sanitarium, have you tried that one? I find it so hard to think of low-carb dinners as a vegetarian.

The quorn mince is really nice when mixed with things (taco seasoning or spaghetti sauce). Not so much on its own! I haven’t tried the sanitarium one, is it in the frozen foods section? I don’t think I’ve seen it! Yes it is hard to think of low-carb dinners. Sometimes I have a veggie pattie (one of those ones that are designed to be like meat, quorn has them) plus two eggs

Just curious, do you ever think about eating any meat or seafood? I went vegan when I was 16 until 19 and then went pescetarian and have been on and off vegan and pescetarian since then. (I’m 21 now) Lately I have been considering giving up eggs and all dairy but starting to eat free-range (lilydale) chicken. It’s so confusing. I love animals and kind of started researching what would be the least harmful animal product to have but I don’t know. Just curious if you ever think about it
Yes sometimes I do think about it. I think dieting would be a lot easier if I ate fish. I still may attempt to eat it one day but I never had seafood growing up so don’t particularly like it. For now I think there are so many vegetarian options that if I can be healthy without a life having to be spared for my meal then I shouldn’t eat it. I love feeling guilt-free about my lifestyle, something I never had when I ate meat.

Ohhhhhh, ladies, PLEASE do not eat Quorn if you’re trying to be healthy! There is nothing at all healthy about this meat substitute. It’s made from the lowest of the low forms of fungi, and it’s linked to a lot of horrible things. I urge you and Melissa both to do a bit more research into what you’re actually eating. The main ingredient is “mycoprotein”, and it’s linked to various unsightly side effects, such as digestive problems, bloating, stomach pain, and allergic reactions if you have an insensitivity to it. I used to eat all of the Quorn products before I researched it. Some of the products were fine, and others left me ridiculously ill. There are entire websites dedicated to the ill-effects of Quorn products. There are loads of great vegetarian options out there; unfortunately, Quorn is not one of them. Please do more research, and anyone reading this, do NOT but this disgusting product. Just because something is meat-free doesn’t mean it’s healthy.
