Peanut Butter & Banana Oatmeal Squares

I am always on the hunt for healthy recipes and did a random google search for the ingredients I had in my house. After typing in
‘healthy peanut butter banana recipe’ I found this wonderous recipe that I managed to tweak a little bit and voila! A healthy snack that is easy to cook.

Note: I didn’t have an egg so replaced it with 1/4 of a cup of applesauce. I also replaced the brown sugar with 1/3 of a cup of manuka honey (any honey will do!). I’m an idiot and as always forgot the vanilla extract, woops!

 

Ingredients:
-1 and 1/2 cups quick cooking oats
-1/4 cup packed light brown sugar
-1 tsp. baking powder
-1/2 tsp. salt
-1 tsp. cinnamon
-1 tsp. vanilla extract
-1/2 cup milk
-1 large egg, lightly beaten
-1 large mashed banana
-1/4 cup creamy peanut butter
Instructions:
Mix together the quick oats, brown sugar, baking powder, salt, and cinnamon. Add in the vanilla extract, milk, and egg. Mix the ingredients together.
Add in the mashed banana and peanut butter, and combine all of the ingredients. Pour the mixture into a lightly greased 8 x 8 baking pan. Bake at 350 degrees for 20 minutes. Cool and cut into squares.
