I have just recently learned how to make soup (yes I know, quite simple and by 21 I should really know this already!) Anyway I found some low calorie soup recipes online and decided to share the wealth!

Red Pepper (Capsicum) Soup
Tomato Soup
Sweet Potato & Carrot Soup

I have bought a tub of weight watchers extra light sour cream so I add a table spoon to the middle of the soup and some black pepper on top.

Delicious!

Especially in the cold weather. I can’t believe I hadn’t thought of this sooner lol. All of the soup recipes above really fill you up and are very low in calories.

PS: Here is the calorie content for the Sweet Potato Soup, it’s not written on the website.

1 teaspoon olive oil – 60 calories
1 small onion, finely chopped – 26 calories
1 clove garlic, crushed – 4 calories
2 medium carrots, peeled, chopped – 50 calories
1 (400g) orange sweet potato, peeled, chopped – 135 calories
½ teaspoon ground turmeric – 4 calories
1 teaspoon cumin – 8 calories
1 litre chicken stock (I used vegetable stock which had 6 calories per cube, so 6 x 8 = 48) 48 calories
Salt and pepper to taste (0 calories for salt and 16 calories per tablespoon of pepper)
1 tablespoon finely chopped fresh chives – 1 calorie

Total Calories = 352
Total Servings = 4
Calories Per Serving = 88

OMG! The tomato one is THE BEST! I cooked up a big batch and put it in the freezer. I take it to work when I am too busy to make lunch the next day. With these Winter days – soup is the best. And so much better knowing what is actually going into it hey? The canned stuff can have a lot of salt in it. I added a lot of fresh herbs from my garden – basil is definately the best.
