What are you making for Christmas this year? I did Caramel Slice last year and it was such a hit that I will probably do it again. I’m thinking of making some sugar free christmas cookies too. I just need somebody to test out this recipe for me as I know I will devour the whole batch if I do it myself!
Ingredients
1/2 cup shortening
3 tablespoons sugar substitute with aspartame (such as Equal packets)
1 egg
2 1/2 cups cake flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup skim milk
2 tablespoons water
1 teaspoon vanilla extract
Directions
Cream shortening, add sugar substitute and egg; beat well. In a separate bowl, combine dry ingredients, add the milk, vanilla, and water. Put in flour mixture and stir well.
Chill dough 2 to 4 hours.
Preheat oven to 325 degrees F (165 degrees C).
Roll out 1/8 inch thick and cut the cookies. Bake for 8 to 10 mins. Cool. Keep in air tight container.

I like this recipe but I need to point out that aspartame is an absolutely awful substance and can cause tumor and cancer growth as well as actually cause people to gain weight over time. It is a really, really scary ingredient (people should google it) and you would actually be better sticking to a less processed, unbleached sugar (like turbinado) that still has some minerals and vitamins left in it then using aspartame. I myself would probably use agave, honey or maple syrup as the sweetener since both have nutrients still in them. Low or no calorie is not always better!
awe but aspartame is awful for you! why not stevia packets?? it is the only sugar substitute that is not detrimental to your health!
I know the dangers of aspartame, this recipe can be altered so you can use Stevia instead! I should have mentioned that, woops

I know you know about stevia (I’ve seen you post recipes with it before). I was actually just posting that comment for if anyone visiting the site doesn’t know the dangers of aspartame so they could make an informed decision. I’m so sorry if it seemed snarky at all! I love your site:-)
